Gather Your Ingredients
1 kg chicken, cut into serving pieces
1 piece green papaya, sliced
2 cups malunggay
1 piece onion, chopped
1 thumb-sized ginger, sliced
4 cloves garlic, minced
2 tbsp fish sauce
5 cups water
14 ounce chicken broth or stock
Salt and pepper to taste

Sauté: Heat oil in a pot, sauté garlic, onion until aromatic.

Chicken Dive: Add chicken pieces, a bit of fish sauce and cook until slightly browned.

Waterfall: Pour in water and bring to a boil. Add ginger and chicken stock. Simmer for 30 minutes.

Flavor Splash: Add fish sauce, green papaya, and simmer for another 5-10 minutes.

Green Finale: Add chili leaves or spinach. Cook for 2 minutes.

Season to Taste Add salt and pepper to taste.
